Day 290- Nutrition Bite

Mom’s Chili Recipe

1 lb lean ground beef (optional)
2 large onions chopped
2 – 15 oz cans light red kidney beans
2 – 15 oz cans dark red kidney beans
1 – 28 oz can Italian style tomatoes
1 – 14 oz can stewed tomatoes
2 – 4 oz cans diced green chiles
½ c chili powder
1 tsp dried crushed oregano
¼ tsp ground red pepper (optional)

Cook for 1 ¼ hours
Creates 12 cups

My neighbor gave me this recipe. She is vegetarian, thus omitted the ground beef. The soup is great with or without meat espeically during these cold winter days. The soup is loaded with protein and fat which will give your body the insulation and calories needed!
