Day 253- Nutrition Bites


Dr. Pesacatore, former medical director of the Atkins Center for Complimentary Medicine in NYC, mentions complex carbs like wheat berries are better for you! When your body processes wheat berries, it has to break through the endosperm and the cellular structure. When you eat refined carbs, the cellular structure is gone. Complex carbs are slowly metabolized so you don't have rapid blood sugar swings or insulin spikes. In addition, complex carbs provide vitamins, mineral, and nutrients! They are more filing and satisfying. So, eat your wheat berries today!!

Lately, I have been making porridge with wheat berries. It is very satisfying! Click on recipes and scroll to slow cooker porridge. As children, we called wheat berries "mini footballs". Your children might be more motivated to eat wheat berries if you tell them they are eating mini footballs. At least, breakfast might be more interesting!
