I was talking to a friend who swears by coconut oil. Today, he made lentils and added a small amount of coconut oil. I asked him why he uses coconut oil instead of olive oil. He said coconut oil is a cis-fatty acid structure which converts energy more efficiently; whereas, trans-fatty acids are mainly converted into fat. Reduce fat by cooking with coconut oil!
