Healthy Cookies

2 cups whole wheat flour or spelt flour
1 cup rolled oats
1 cup nuts and seeds(pumpkin, walnut, sunflower, etc) or 2 cups of trail mix
1 cup raisins or currants
1 cup carob chips (chocolate chip substitute)
1 tsp cinnamon
1 tsp pure vanilla extract
4 eggs
1 1/2 cup crushed pineapple with juice
1/2 cup unpasteurized honey
1/2 cup fresh squeezed orange juice (optional)

Preheat oven to 350 degrees. Add first 5 dry ingredients to a large mixing bowl. In a small bowl add beaten eggs, pineapple with juice, honey and mix well. Add wet ingredients to dry and blend. Add orange juice if needed for more liquid. Spoon onto greased cookie sheet. bake 20-25 minutes or until golden brown.

Last night, I tried these at a triathlon potluck dinner. They are very moist and tasty!
